The philosophy of wine according to COBUE.

Intense ruby red color and tending to garnet with aging, obtained by maceration of Rebo grapes harvested and selected at perfect maturation after a careful selection in the vineyard.

Half of the vintage ages in steel and a the other half in barrique and tonneaux. A delicate blend for a wine that has intense notes of berries and macerated prunes at the nose; with the aging in the bottle you can reach spicy notes such as black pepper and cinnamon. It has a good structure and a persistent, pleasant, velvety and harmonious taste, always improving with the aging in bottle.

Excellent with all red, braised meat, or with long-seasoning cheeses. Perfect on his own, as an excellent meditation wine.

Refinement and evolution: in steel for 12 months each wine, then 20% in large barrel blended for 8/10 months, 20% in barrique in blend for 8/10 months, the rest in blend in steel for 8/10 months

Malolactic: yes, only the part in barrique
